- Christmas Eve Menu: Appetisers featuring acorn-fed Iberian ham with tomato gel, Cadiz-style crayfish croquettes with Iberian pork jowl, and scallops Thermidor with herb hollandaise sauce. To start, a warm courgette vichyssoise with Baerí caviar, followed by line-caught hake in green sauce with clams and citrus fruits, lime and cava sorbet, and charcoal-grilled sirloin steak with foie gras and vermouth-marinated grapes. For dessert, rum-roasted pineapple with passion fruit and coconut ice cream. Coffee, herbal tea and Christmas sweets.
