- The GLH Group’s bistro, situated opposite the Neptune Fountain, features new dishes that pay homage to the great classics whilst retaining the relaxed, authentic character that defines its cuisine.
- Toasted steak tartare and micuit foie gras, an onion soup sandwich, Aranjuez fig carpaccio with stracciatella and anchovies, langoustine rings with cocktail sauce, and puff pastry with grilled sirloin and foie gras are just some of the new additions.
Chez Madrid welcomes the new season by adding new dishes to its menu. Located in the iconic Plaza de Cánovas del Castillo, opposite the Neptune Fountain, the restaurant continues to develop its own unique take on the bistro: a distinctive, appetising and unpretentious cuisine that combines French influences with ingredients and flavours deeply rooted in Madrid.
Since opening, Chez Madrid has made classics its hallmark. Here, the spirit of an elegant French bistro coexists with the familiarity of a Madrid-style bar, both in the cuisine and in an approach to the restaurant that invites guests to linger over their meal and return time and time again.
Now, with the arrival of autumn, its menu expands with new dishes that stay true to this philosophy, focusing on seasonal produce, familiar recipes and dishes with a touch of nostalgia, reinterpreted through the Chez Madrid lens.
Among the new dishes is the steak tartare and foie micuit toastie (€7.50), an intense yet delicate combination designed to be shared as a starter. Also on the menu is the onion soup sandwich (€13.50), a unique twist on one of the great icons of French cuisine, adapted to the informal and relaxed atmosphere that characterises the restaurant.
Seasonal produce takes centre stage in the Aranjuez fig carpaccio with stracciatella and anchovies (€18.50), where the fruit’s sweetness is balanced by the salty notes of the anchovies and the creaminess of the stracciatella.
The menu continues with the langoustine ‘romanitas’ with cocktail sauce (€22), a nod to those classic dishes that form part of the traditional gastronomic imagination, and culminates in the puff pastry with grilled sirloin and foie gras (€26.50), a dish with deep, enveloping flavours specially designed for the colder months.
A bistro worth staying for
The new offerings sit alongside some of the dishes that have already become hallmarks of Chez Madrid. From its freshly prepared potato omelette or the croissant with crab salad and cocktail sauce, to the Chez Madrid mussels with crispy chips, the sole meunière or its grilled meats.
A concept that revives the pleasure of eating familiar, expertly prepared dishes and finds in seasonal ingredients a natural way to continue evolving without losing its essence.
Chez Madrid also remains true to its ethos as a restaurant for any time of day. Its prime location opposite the Neptuno fountain and its warm atmosphere allow guests to transition from a casual lunch to an intimate candlelit dinner, making it one of those places that changes its pace as the day progresses.
The space, designed by Proyecto Singular, complements this philosophy. A bar and high tables welcome guests before they reach a small dining room dominated by a large window overlooking the Neptuno fountain. Warm materials, subdued lighting and references to French bistros and 1960s Madrid bars create an elegant yet relaxed atmosphere, which is complemented by its outdoor terrace.
With these new additions, Chez Madrid continues to cement its identity as a contemporary Madrid bistro, where French and traditional elements coexist naturally and where classic dishes are reimagined without losing what makes them classics in the first place.
