Alberto Pacheco, with previous experience in projects such as Madrid’s Estimar, understands the sea like few others. His cuisine is an in-depth journey that combines the fishing traditions of the Pitiusan islands with the creativity of haute cuisine. At Hannah, the produce does not come via middlemen, but directly from the nets of the llaüt La Maja and the island’s traditional boats, which every morning supply the kitchen with freshly caught lobster and other delicacies. For the traveller who appreciates excellence, Hannah Formentera features rock fish, the aforementioned lobster and shellfish as the stars of the menu. Standout dishes include garlic-infused lobster with potatoes and fried eggs, grilled grouper with whisky sauce, or prawns dressed with saffron escabeche and their roe – all creations that demonstrate precise technique, absolute respect for the produce, and which always evoke the purity of the sea.
