Located on the central and historic Avenida de Los Cubos in the city of León, Carea Bistró offers a unique and fun dining experience. Signature cuisine with the soul of the land, masterfully blending produce from other parts of Spain with flavours from beyond our borders. 

Carea Bistró opened its doors in 2022 on Calle Platerías in the well-known Barrio Húmedo neighbourhood, before moving to its current location in 2025. A short but highly successful history, which has enabled it to become one of the city’s leading restaurants. For those of us from León, the restaurant’s name and the image that goes with it – a dog – certainly don’t go unnoticed. The Carea Leones is a native breed noted for its intelligence, agility and skill in herding livestock. For a long time, it was the result of cross-breeding with other dog breeds, and in recent years, significant work has been carried out which has enabled it to evolve into a breed with very distinctive characteristics. In choosing the name, they wanted to play on the evolution of their cuisine, which has taken on different forms over time, whilst striving to do things as well as possible. It was a journey that led Mario and Ana to come together, resulting in a distinct style of cuisine that is the product of their partnership.

Carea Bistró was born out of their shared passion. Mario, from León and a proud supporter of the land, and Ana, a keen traveller, combine their experiences to offer a unique market-inspired cuisine. Using locally sourced produce wherever possible, and seasonal ingredients, it blends tradition and modernity to treat us to a dining experience you’ll remember and recommend.

Recommended by the Michelin Guide (2023, 2024, 2025 and 2026) and the Repsol Guide (2023, 2024 and 2025), we are confident that their expertise and quality will earn them further accolades in the coming years.

The hosts3

Having both trained at the San Cayetano de León School of Hospitality, their lives took different paths once they had finished their studies. Ana couldn’t resist her urge to see the world and learn from the best chefs. From school, he went on to work in Paco Roncero’s kitchens, then in Dani García’s, before moving on to Italy and Switzerland. He returned to Spain to work with David Muñoz at StreetXO and ended up in Ibiza before heading back to León. During his stay in the city, he worked at LAV in the Hotel Alfonso V and at Kamín, one of his favourite restaurants. Almost all of them were gourmet restaurants, as that was what caught Ana’s attention, helping her to improve her technique and, above all, her fusion cooking.

For his part, Mario has never wanted to leave his town. He started out at the now-defunct Mirai and from there moved on to El Ermitaño, a leading establishment in Castile and León for classic fine dining. He returned to León to get involved in the Clandestino Koi project and from there went to Mercado on Calle Varillas. Mario is grateful to be able to carry out his work in León and contribute to the boom in the city’s gastronomic scene that has taken place over the last fifteen years, during which time a great many high-calibre establishments have emerged.

They met shortly before the onset of the COVID-19 pandemic and, once that difficult period was over, decided to start a life together. Although it wasn’t the right time to launch a project involving a significant financial outlay, they went ahead with it, initially in premises that were already set up as a restaurant. Three years on, and in light of their success, they set out to find the sort of premises they wanted: somewhere small where they could offer a high-quality service and which would allow them to balance work with their personal lives. They found it on Avenida de Los Cubos.

Since the restaurant opened, Ana has been the chef, bringing her creative flair to the dishes, whilst Mario has been in charge of the front of house and the wine cellar; but since they moved to new premises and following the birth of their baby, they’ve both been working in the kitchen. They’re able to do this thanks to the layout of the premises, which they can manage with ease.

A cuisine based on fresh produce with a touch of fusión3

The cuisine at Carea Bistró is characterised by its focus on seasonal ingredients, quality produce and fusion. Wherever possible, they use local produce from the province, such as tomatoes from Mansilla, peppers from Fresno and cheese supplied by the artisan cheese-maker Praizal, a family-run business owned by their own family, located very close to León, in the Oteros region. The trout come from the neighbouring province of Palencia, and Ana knows them well, as the river where they are caught is very close to the village where her grandparents were born – her family’s village. The fish and seafood that enrich their menu come from various parts of Spain.

As for game dishes, they try to source the meat locally as well, although it is often processed in Extremadura or Castilla-La Mancha because there are no companies in León that carry out this work.

The culinary offering is also characterised by Mario’s deep connection to the land and its produce, as well as by the fusion of flavours created by Ana, which pair so well with local produce.

Carea Bistró also has a strong connection with game, as seen in dishes such as lentils with quail and curry, or venison loin steak tartare. Meanwhile, traditional dishes from León, such as pork jowl, share the plate with baby squid, kimchi and romesco.

The fish are served with gazpacho with ceviche-style lemon fish, or with monkfish served with a black garlic and sake sauce and a pistachio crust. And the seafood with chipotle and jalapeño mayonnaise, as in the case of the Huelva prawn hot dogs.

The menu’s design depends largely on the products that become available. This means it’s constantly changing and there’s no time to update it, so they come up with new off-menu suggestions on the spot. But these situations sometimes lead to ideas I hadn’t thought of before, which end up being a great success. This is the case with some meatballs they made using some chops that didn’t fit into any of the planned dishes. They proved so popular that they were forced to reintroduce them in response to customer demand.

The history of Carea Bistró has been shaped by dishes that have garnered widespread acclaim and which remain on the menu to this day. Take, for example, the bluefin tuna tartare served on roasted beef marrow, the grilled veal sweetbreads with fried lemon and strawberry hoisin sauce, or the garlic prawn croquettes, which they have been serving to their diners for four years. Created by Ana several years before the restaurant opened, they are exceptionally delicious, and it takes three days’ work to make them, with both of them taking part in the process.

There are also dishes of which they are proud, which hold a special place in their memories, but which, unfortunately, we are unable to taste today. Who knows, perhaps they’ll come back one day. This is the case with osmotised cherry tomatoes served with lychee foam, wild boar ribs and leeks from Sahagún.

It could be said that Carea Bistró is a restaurant serving traditional cuisine in terms of the ingredients it uses, but not in terms of its cooking techniques. This is evident in dishes such as curried lentils with quail, a dish that is surprising because it bears no resemblance to traditional lentil dishes; the Órbigo croquettes, which are available on the tasting menu and made with trout soup, grilled sweetbreads or wild boar ribs. In a nod to the city, they recommend the prawn carpaccio with León-style sauce and suckling pig’s ear.

They also offer an excellent tasting menu, which is set to change shortly. One of the new features on offer is a “tapas” tour of León, during which they’ll be putting their own spin on their favourite “tapas”. The experience will begin with eight tapas and eight snacks, and the tasting menu will follow on from there. An interactive map will be provided on the table so that diners can see where each of the participating establishments is located in the city, enabling anyone who wishes to do so to try the original tapa. A fun and original idea that will also serve as a modest tribute to some of the city’s most iconic venues.

Mario is in charge of managing the wine cellar at Carea Bistró; wine is a world for which they both have a passion. They have around 130 national and international titles. Mainly Spanish wines from small producers in Tierra de León in the case of Albarín, from Zamora, from Arribes del Duero in Salamanca, from the Ribeira Sacra, from the Rioja Alavesa, from the south of the peninsula and some from France.

In an informal setting designed to offer exquisite cuisine, Carea Bistró provides the opportunity to enjoy a distinctive, daring and surprising signature cuisine. With the spirit of a globetrotter and the soul of León, they want to share their love of food and the city with you.
