“A CUATRO MANOS” KICKS OFF 2026 WITH A CULINARY DIALOGUE BETWEEN DIEGO GALLEGOS AND MAURICIO GIOVANINI

  • The gastronomic event kicked off the 2026 season with an exclusive tasting menu and marked a new phase for the project, which is celebrating its fifth anniversary this year, expanding its scope and reinforcing its national focus.

The “A Cuatro Manos” gastronomic experience returns this year to Arara Bistro Bar with a new edition that reflects the natural evolution of a project that has continued to grow and consolidate over time. Promoted by chef Diego Gallegos together with Higuerón Gran Málaga Resort, this year the format is expanding its national scope by incorporating, as a major new feature, renowned chefs from different parts of Spain.

The event on 31 January brought together Diego Gallegos, internationally known as the Caviar Chef, and Mauricio Giovanini, chef and owner of Messina (Marbella). Two cuisines with their own personalities that engaged in a dialogue based on absolute respect for the product, technique and a very personal way of understanding gastronomy.

“A Cuatro Manos” menu: technique, product and emotion

The evening revolved around a tasting menu designed exclusively for the occasion, in which both chefs alternated proposals and created dishes that reflected their culinary identity and their understanding of cooking as a shared language.

The journey began with a tuna tartare, txuletero fat and sour apple, a creation by Diego Gallegos that played with the balance between freshness, creaminess and acidity. This was followed by a toasted scallop with seaweed juice, created by Mauricio Giovanini, where the seafood was expressed with depth and elegance.

Next came one of the most intense courses on the menu: sturgeon, foie gras, tubers and truffle, again by chef Gallegos, before giving way to duck confit with sweet potato and mandarin, a creation by Giovanini that combined classic technique, citrus nuances and a contemporary interpretation of flavour.

The sweet moment brought both chefs together again from their creative universes. Diego Gallegos presented yoghurt, honey and flowers, a delicate and fresh dessert, while Mauricio Giovanini closed the experience with chocolate with coffee and macadamia meringue, intense and elegant.

The experience was rounded off with a live performance by Diego Gallegos and his band, which provided the musical finale to the evening and added a playful and intimate dimension to the night. This personal touch reinforced the chef’s creative and multidisciplinary nature and helped to make the event even more memorable for those in attendance.

A growing project with a national outlook

This edition inaugurates a gastronomic calendar that will run throughout the year, consolidating “A Cuatro Manos” as a platform open to national culinary talent. After Mauricio Giovanini, the project will feature chefs such as Álvaro Garrido (27 March), Javier Estévez (24 April), Maca de Castro and Begoña Rodrigo – La Salita (29 May, “A Seis Manos” edition), Kiko Moya (26 June), Kisko García (31 July), Iván Cerdeño (28 August), Luis Veira (25 September), Carito Lou (30 October) and Rafael Centeno (27 November).

The format has thus evolved from its origins, focused on Andalusian talent, to a nationwide offering, while maintaining its essence: intimacy, complicity and a unique experience, designed to be enjoyed in a single evening.
