CAPPADOCIA ENTERS THE MICHELIN GUIDE AND STRENGTHENS TÜRKIYE’S GASTRONOMIC POSITIONING

  • Cappadocia has established itself as one of Türkiye’s most exciting gastronomic destinations following its inclusion in the MICHELIN Guide, combining Anatolian tradition, local produce, sustainability and contemporary creativity in a unique landscape.

The MICHELIN Guide’s journey in Türkiye began in 2022 with the announcement of MICHELIN İstanbul 2023. It subsequently expanded to İzmir and Muğla and, in 2025, welcomed Cappadocia, marking a new milestone in the international promotion of the country’s rich and diverse culinary heritage. Renowned worldwide for its fairy chimneys, ancient rock-cut dwellings and iconic hot air balloon flights, Cappadocia joined the MICHELIN Guide with a total of 18 selected restaurants.

With new MICHELIN-starred restaurants, a strong commitment to local ingredients, chefs who reinterpret Anatolia’s ancestral recipes from a contemporary perspective, and a strong commitment to sustainability, the region has quickly positioned itself as one of Türkiye’s most attractive gastronomic destinations.

Gastronomy shaped by the land, tradition and craftsmanship

Cappadocia offers memorable culinary experiences that add to its scenic and cultural appeal, making it a unique gastronomic destination. Local dishes are made using centuries-old recipes, traditional cooking techniques, organic produce grown in volcanic soil and aromatic grapes from nearby vineyards. The MICHELIN Guide’s selection, with its emphasis on local memory, highlights the region’s enormous gastronomic potential.

This recognition goes beyond the MICHELIN Star and Green Star distinctions. Cappadocia also has a strong presence of Bib Gourmand restaurants and MICHELIN-recommended establishments, including women’s cooperatives, family businesses, and historic establishments that have remained faithful to their traditions for generations. Together, they form a gastronomic journey that connects visitors with the landscape, local producers and the authentic flavours of the region. From contemporary haute cuisine restaurants to traditional eateries, each establishment tells its own story through the spirit of Cappadocia and offers truly memorable culinary experiences.

Roots in the earth: Cappadocia's culinary heritage

Beyond its visual impact, the landscape of Cappadocia is a generous source of exceptional ingredients that are reflected in every dish. Stews gently sweetened with fruits such as apricots or homemade erişte (a type of pasta) served with pumpkin seeds offer a local culinary experience that brings the flavours of the region directly to the plate.

Cappadocia’s gastronomic scene is deeply rooted in Turkish and Anatolian traditions. As such, recipes prepared using traditional cooking methods invite you on a sensory journey through the region’s history. Among them, testi kebabı (kebab in a clay pot) is one of the most iconic culinary memories of the trip. Prepared in ceramic pots made in the town of Avanos and slowly cooked in a tandır oven, the dish is served by breaking the pot in front of the diner, releasing an intense aroma and a steaming stew that arrives directly at the table.

The experience is rounded off with specialities such as kayısı yahnisi, which combines meat and dried apricots cooked over a wood fire; quince stuffed with minced meat, nuts and spices; or ağpakla, a stew of white beans and tender meat prepared in clay. For dessert, a selection of traditional sweets such as incir yağlaması (figs cooked in butter), pumpkin dessert, dolaz (a halva made from flour and butter) or Damat baklava in the style of Ürgüp provide a sweet ending to the experience.

Iconic local flavours such as Niğde Mavisi cheese or Divle Obruk cave-aged cheese pair perfectly with regional wines. Surrounded by fertile vineyards, Cappadocia is renowned for its wines made from native Anatolian varieties such as Boğazkere, Narince and, especially, the Emir grape, distinctive for its fresh and mineral character. Beyond the table, this wine culture can be explored through visits and tastings at local wineries, completing a gastronomic immersion deeply linked to the territory.
