Casa Nokiate stems from a true story. Its origins date back almost twenty years—they’re celebrating their anniversary this year—in Antigua Guatemala, when its founder, Pablo Velásquez, decided to pursue his dream and open a restaurant unlike anything that existed at the time. Faced with a lack of Asian ingredients, the kitchen began to adapt to its surroundings, substituting products and techniques until it developed its own language that blended Asia and Latin America without forced labels.
Over time, and alongside Andrea Osoy, the project not only grew but established itself as a brand with its own identity. Together, they have driven its evolution, expanding its creative universe and taking that honest, unpretentious fusion to a new dimension, until Casa Nokiate became what it is today: a meeting place with a Latin soul and a contemporary outlook.
That spirit arrives in Madrid today transformed into a contemporary neo-tavern, where the classic is freely reinterpreted. The menu plays with recognisable references and unexpected twists: crispy pork crackling on cassava, tiraditos and ceviches with tiger’s milk made from our own chestnuts, hot dishes that blend Asian techniques with Latin flavours, and a pace designed for sharing.
The experience is rounded off by a bar that takes centre stage. Casa Nokiate’s cocktails are fresh, creative and very drinkable, featuring original recipes that draw inspiration from Latin America—particularly Guatemala—and are adapted to the Madrid vibe. Cocktails with character, a gentle kick and personality, designed both to accompany a meal and to extend the evening.
In the kitchen, the project is led by chef Gustavo Montestruque Bisso, whose sensibility reinforces the Latin and contemporary core of the concept.
Casa Nokiate does not seek to fit into a specific category. It is a neo-tavern that views gastronomy as a social experience and the bar as a meeting point. A place that connects with the new Madrid and already feels part of its scene.
