COKIMA KICKS OFF SPRING WITH 15 NEW RECIPES

Cokima (Andrés Mellado, 21. Madrid. Tel. 91 598 94 01) has become one of the area’s must-visit spots in its own right, having been putting smiles on faces for over five years with that “orgasm, at the first bite” slogan that shines on its casual walls. Anyone unfamiliar with this groundbreaking spot is missing out on the pleasure of licking their fingers with every bite, and for its loyal clientele, we’re pleased to announce they’ve just launched a new menu… and what a menu!

Since opening in 2020, its successful concept has centred on local produce with an international twist and a traditional one, combined in many dishes and separate in others, thus winning over all kinds of palates. What’s more, their dishes are perfect for sharing—an ideal way to discover the new additions, as there are plenty of recipes that have just arrived; and alongside them, the one constant on the menu: their famous Joselito ham croquettes with a veil of Iberian pork jowl, which, just as they remain on the menu, are never missing from the order.

Among the new arrivals, the Homemade pastrami gilda with pickles and Kalamata olive sauce stands out – because Madrid wouldn’t be the same without a good gilda – and they pay homage to the city’s classics with two quintessentially traditional dishes: Cokima’s Minutejos: potato mille-feuille with crispy pig’s ear and brava sauce and The Squid Sandwich: dumpling of stewed baby squid wrapped in rice paper with aioli sauce. More adventurous options include the Tacos del Gobernador with king prawns, ñora peppers and Oaxaca cheese or the Sea bass ceviche with passion fruit leche de tigre and quinoa. All familiar recipes, with a distinctive twist, a burst of flavour… and 100% homemade.

But Cokima is much more than just finger food, as demonstrated by the scrambled eggs with crispy potato, grilled octopus, smoked huancaína sauce and paprika oil, the pork cheek wontons with Mexican mole, cured egg yolk and achiote mayonnaise, and the creamy rice with grilled scarlet prawns and parsley aioli. You’ll want to tuck into every single one… and you’ll still need to leave room for dessert: Brutal cheesecake with Idiazabal ice cream and salted toffee and Tremendous torrija with a dulce de leche and caramel centre.

Cokima is open from Wednesday to Monday from 1 pm to 4 pm and from 7.30 pm to 11.30 pm; on Fridays and Saturdays, they operate non-stop from opening to closing, ideal for lingering over a meal or having a drink in the late afternoon. The relaxed and fun venue – with a wall dedicated to its customers – seats 41 people across high tables, an original bar and a cosy round table perfect for eight diners. The average price is €50 and there is a short but excellent wine list to complement the experience.
