- Although it is of French origin, it is, in its own right, one of the most famous dishes (in a good way) in Spanish cuisine.
It began as a way to use up leftovers and has humble origins, although today it is proudly served in the finest restaurants. That’s why it’s a staple on both the main menu and the snack menu at KŌ by 99 Sushi Bar, the Japanese restaurant of the moment, located on the tenth floor of the Bernabéu Stadium. There you will find its unmissable carabinero croquettes, which combine all the character of the best croquette made in Spain with a (delicious) nod to Japan, typical of this temple of the best contemporary Japanese haute cuisine.
As Noam González, the restaurant’s executive chef, explains, only the highest quality scarlet prawns are used in its preparation. They are peeled and their shells and skins are infused in milk to give it an intense aroma. In addition, a roux is made with butter, which serves as the base for preparing, with great patience, a creamy béchamel sauce. When it is ready, without rushing, the prawns are added, in pieces, but not too finely chopped, so that their flavour and potency can be felt in every bite. Once the croquettes are ready, they are coated with panko, Japanese breadcrumbs, which add a very crispy touch, lighter and airier than conventional breadcrumbs. This is undoubtedly a fitting tribute to Croquette Day, celebrated on 16 January, and the remaining 364 days of the year.
