From 15 October to 15 November, Hacienda Zorita Wine Hotel is offering a seasonal dining experience that brings together the flavours of autumn and wines from five wineries in Salamanca and its surrounding wine-growing region, presented by the winemakers themselves.
Autumn invites you to discover the region through its produce, its landscapes and its cuisine. It is the season for wild mushrooms, game and a cuisine defined by seasonal ingredients. Against this backdrop, Hacienda Zorita Wine Hotel offers a way to explore Salamanca and its wine-growing region through an experience that brings together wine, gastronomy and locally sourced produce.
Under the theme ‘Salamanca, from vineyard to table’, the Hacienda Zorita Wine Days will take place from 15 October to 15 November, with a programme that brings together autumnal cuisine, locally sourced produce and five wineries from Salamanca and its wine-growing region. An invitation to enjoy this time of year around the table and to discover the stories of the people and places behind each wine.
The flavours of autumn, from the land to the table
Mushrooms, game and seasonal produce take centre stage on the menu designed by the Hacienda Zorita kitchen team for these events. A programme based on the ingredients typical of this time of year, which highlights local produce, seasonality and the flavours that connect gastronomy with its surroundings.
The menu begins with a boletus cream soup with shavings of marinated quail, apple and hazelnut. This is followed by three main courses: prawns with oyster mushrooms, citrus and fennel; free-range red partridge with senderilla mushrooms, walnut cream and its own juices; and wild boar loin with black trumpet mushrooms, celeriac and blueberries. To finish, a chestnut coulant with sweet potato sauce provides the sweet finale to the experience.
The gastronomic offering is the common thread running through these events, in which the wines from each winery are incorporated into the itinerary to complete an experience linked to the flavours and character of Salamanca and its surroundings.
Wine, as told by its makers
Each event will be attended by representatives from the participating wineries—owners, winegrowers, oenologists or winemakers—who will share first-hand accounts of the history of their projects, their relationship with the landscape, the grape varieties they work with and their approach to wine.
Beyond tasting different wines, the event offers the chance to meet the people who make them and discover the decisions, tradition and personality behind each bottle. In this way, wine complements the gastronomic experience as another way of exploring the identity of each place.
Five wineries to discover Salamanca and its surroundings
The Wine Festival will begin on 15 October with Dominio de Gallo, from Arribes, and its wines Insolente, Infrecuente and Aún.
From 22 to 25 October, it will be the turn of Cámbrico, from the Sierra de Salamanca, with Rufete Blanco, Rufete Villanueva and 575 Uvas.
From 29 October to 1 November, Sotero Pintado, from Zamora, will present Malvasía, Totem and La Regilona.
From 5 to 8 November, Quinta de Mil, from Arribes, will showcase its wines Puesta Cruz, Bruñal and Juan García.
And, to round off the event, from 12 to 15 November, Alma Roja, also from Arribes, will take centre stage with Pirita Blanco and Pirita Tinto.
Through these events, Hacienda Zorita Wine Hotel is strengthening its ties with Salamanca and the surrounding area, bringing its guests closer to the producers, wines and local specialities that define the region. An initiative that celebrates autumn through local connections and invites guests to discover, through wine and gastronomy, the stories that spring from this land.
