KABUKI MADRID REINVENTING CHRISTMAS BRUNCH WITH FOUR COURSES OF HAUTE CUISINE

Kabuki Madrid launches its new Christmas Brunch, available every Sunday until 4 January inclusive. A four-course proposal designed by chef Alejandro Durán that takes the concept of brunch to a more technical, precise and definitely Kabuki level. Without a doubt, this is a tour designed for those seeking a brunch experience that goes far beyond the usual.

This gourmet brunch reflects the soul of Kabuki Madrid, a restaurant awarded one Michelin star and one Repsol Sun. The menu opens with sakizuke, a bite designed to set the tone: Senbei Toro, a crispy rice cracker with tuna belly and Mexican pastor sauce that combines texture, fat and freshness with a very Japanese cleanliness.

The second act, otsukuri, emphasises cutting and balance. The now iconic Pa amb Tomaquet with ventresca tuna, Gyutataki — sirloin lightly seasoned with ponzu, garlic confit and fresh spring onion — and spicy avocado tartare form a trio that alternates depth, acidity and vegetal notes without losing precision. It is probably the most recognisable block in the Kabuki language.

In shusai, diners choose from five main dishes. The mushroom casserole and fried sushi rice with sukiyaki sauce stands out for its umami profile; the selection of six pieces of sushi demonstrates mastery of cutting and maturation; Chilli Jam Noodles balance wok, prawn and mild spiciness; and the two versions of fluffy pancakes — matcha with coconut-lime ice cream or savoury with poached egg and Joselito ham — add texture and contrast without being overly sweet or fatty.

The finale, more direct and unpretentious, comes with pumpkin rings with 70% Valrhona chocolate, a dessert that combines tradition with a polished technical finish.

In terms of beverages, brunch includes Mimosa-ke or a glass of Taittinger Brut Réserve Champagne, as well as water, soft drinks or beer, and a Matcha Latte or coffee. A measured accompaniment, designed not to overshadow the menu. The price is €65 per person.
