  • Over the coming months, the restaurant is hosting the ‘Oxtail Gastronomic Days’ in collaboration with El Capricho, a meat supplier that is exclusive to the capital; these include both traditional and avant-garde dishes that can be sampled at Padre Damián, Marqués de Salamanca and Valdebebas.

 

  • Boneless oxtail stew with a creamy potato purée, dry-cooked oxtail rice with boneless oxtail stew, and bao buns with boneless oxtail and Sriracha mayonnaise pearls are the three dishes devised by the group; these dishes are not on the regular menu and are available every day for lunch and dinner.

In May and June, Rocacho celebrates one of the most eagerly awaited events for lovers of oxtail. During these months, this temple of traditional gastronomy and charcoal-grilled cuisine in the capital will host its successful ‘Oxtail Gastronomic Days’ in collaboration with El Capricho, a meat supplier that offers its products exclusively in the capital. As every year, this restaurant offers three dishes created specifically for the occasion, in which the star of the show is the extraordinary and world-famous León beef; a unique opportunity to enjoy this succulent cut in both its traditional and avant-garde forms. Rocacho delves into the most traditional recipes and presents boneless oxtail stew with a creamy potato purée and its own cooking juices, dry-cooked oxtail rice with boneless oxtail stew and its own cooking juices, and bao buns with boneless oxtail and sriracha mayonnaise pearls. These off-menu items, which complement the regular menu, are available every day of the week and can be enjoyed at Rocacho de Padre Damián, Rocacho Plaza and Rocacho Valdebebas.

As these creations demonstrate, although oxtail is traditionally associated with slow-cooked dishes, it also lends itself to contemporary reinterpretations; it is one of the most prized cuts in gastronomy due to its enormous potential. It is a bone-in cut, rich in collagen, which during slow, prolonged cooking transforms into natural gelatine, resulting in thick, glossy and wonderfully rich sauces. This characteristic makes oxtail an exceptional ingredient for stews and braises, where it reaches its full potential.

Once cooked, the result is a tender, succulent meat that falls easily from the bone and offers a smooth, enveloping texture. Its flavour is deep yet balanced, more delicate than that of oxtail, allowing for complex preparations without losing elegance.
