Pure culinary craftsmanship with a technological touch
This brand was born from the happy encounter of five friends who were enthusiastic about the collection of preserves by Roi Lojo, a native of Orense, son, grandson and great-grandson of cannery owners, who also runs Punta Carbalo, the restaurant at the Isla de Arousa lighthouse. Together they work to offer the best preserves in the world, without question. Roi, based there, pampers his mussel beds and mussels, talking to the fishermen at the fish markets to obtain the freshest produce. As a result of his quiet dialogue with the sea, and with those he feeds, he obtains exceptional scallops, oysters, octopus, clams, razor clams and sardines. His wife and mother cook and package the produce by hand, fresh from the sea, and transform it using centuries-old recipes inherited from the women in his family. Without haste or artifice, they prepare each batch to preserve a unique craft and flavour over time.
When scarcity is a luxury and a statement of intent
ROI&Co does not aspire to produce more, but rather to produce better. Its series are limited by the very essence of the product. Out of respect for the environment, tradition, and those who, day after day, venture into the cold waters of Arousa. Out of reverence for the sea and its balance, and for its very artisanal essence, Roi&Co has limited production.
The firm presents two lines: Silver and Hors Categorie, identical in purity and recipe, differing only in size and packaging. The Hors Categorie range, presented as an authentic jewel, offers the largest pieces and is a delicacy with the same spirit of ageing as a fine wine.
Another feature that makes Roi&Co preserves unique (they are the only ones in the world to do so) is the use of Blockchain codes. This means that each tin contains a story that can be traced back to its origin: date of production, point of capture, hands involved. Technology thus becomes a gesture of pure transparency.
