  • Don’t miss the new platter of artisanal cured meats from Porc Noir de Bigorre with Designation of Origin, a delicious assortment of ham, salami, rosette and gorge sèche made from delicious Pyrenean black pork, grass-fed and free-range, with limited production.

Brasserie Lafayette (Recaredo 2, Madrid) is one of the capital’s essential French cuisine establishments. A place to enjoy the finest French cuisine and wines and, of course, a must-have after-dinner chat on its landscaped terrace, which is open all year round. Now, for those who are in a hurry but want to enjoy the best French cuisine, Lafayette offers its Plats du Jour at lunchtime, Monday to Friday: three delicious single-course recipes accompanied by water, coffee and bread for only €24. And yet another surprise: Lafayette is introducing its charcuterie board featuring Porc Noir de Bigorre, the famous black pig from the French Pyrenees, known both for its exquisite flavour and its artisanal production. What better way to whet your appetite than with the tastiest and most limited-production French charcuterie?

Plats du Jour: pure brasserie flavour, rich and fast

Plats du jour in France are the equivalent of the Spanish menú del día. Typical of brasseries and bistros, these are hearty, delicious, off-menu dishes served with a drink and coffee for those who don’t have much time to eat but want something special. At Lafayette, three exquisite options are offered Monday through Friday at lunchtime: salmon papillote with vegetables, an addictive coq au vin—coral chicken in Jura wine with pilaf rice—and beef tenderloin with Café de Paris sauce and confit potatoes. It costs €24 and includes water, bread and coffee. What better way to eat well without spending too much time?

The finest black Pyrenean pork sausages

Another of Lafayette’s autumn novelties is its platter of French charcuterie from Porc Noir de Bigorre. The authentic Gascon pork with Designation of Origin. This is a generous serving of ham, salami, gorge sèche and rosette. It is a small, hidden gem in the Central Pyrenees region of France. This breed, very similar to the Spanish Iberian pig, was in danger of extinction in the 1980s but has made a comeback thanks to its high gastronomic potential and the efforts of a large group of farmers, butchers and charcutiers, eager to preserve it in its environment and maintain a documented tradition dating back to the Gallo-Roman era. Raised in freedom and fed a natural diet supplemented with non-GMO cereals and local fruits (chestnuts, acorns, apples, medlars, etc.), their meat is exquisite, much redder and more marbled than classic pork, and rich in antioxidants. Production is very limited: only 20 pigs are raised per hectare of pasture.
