La Mar Madrid presents “El Dim Sum y el Mar”, an exclusive offering that takes dim sum into its own territory: that of the sea and Peruvian cuisine. Available only from 15 June to 2 August, this limited edition features handmade dishes crafted from scratch using traditional Chinese techniques—such as dough preparation, fillings, folding, steaming, frying and sauces—reinterpreted with seafood and unmistakable Peruvian flavours.
Far from offering a traditional dim sum menu, “Dim Sum and the Sea” is conceived in true La Mar style: bites designed for sharing, where artisanal craftsmanship, a maritime identity and a story that is easy to understand on the plate come together. Each dish features references to Peruvian cuisine and its fusion with Asian influences—known as Chifa cuisine—without the diner having to “study” the concept to enjoy it.
The offering emphasises technique and attention to detail. The dough is prepared in the kitchen, the folds are made by hand, and the fillings are crafted in the restaurant itself, with careful attention to textures, cooking times and balance. All of this is structured around a clear central theme: the sea as a creative driving force. Among the flavours and preparations that inspire the menu are chillies, huacatay, parihuela and passion fruit, alongside ingredients such as crab, prawns, octopus, scallops and the catch of the day, which lend the menu its identity and a recognisably La Mar flavour profile.
In a city like Madrid, where diners are familiar with dumplings, stuffed pastries and contemporary Asian cuisine, La Mar enters this conversation from its own unique perspective: not from traditional Chinese cuisine, but from a Peruvian cuisine that engages with China via the sea. The result is a menu of starters designed to spark curiosity and provide the perfect excuse to enjoy and celebrate.
“With ‘Dim Sum and the Sea’, we wanted to adapt the dim sum technique to our own style: handmade dough and folds, filled with seafood and highly recognisable Peruvian flavours. “El Dim Sum y el Mar” will be available for just seven weeks, from 15 June to 2 August, reinforcing the special nature of the initiative.
