Local cuisine from the sea and the land

Its cuisine, with an indisputable character forged by the products of the sea and the land, bears the stamp of chef Alejandro Sosa, a cook who is faithful to local products, the absolute protagonists of Marina Restaurante’s recipes, which give a unique flavour to the dishes.

The excellence of the Valencian products supplied by its network of local producers makes Marina Restaurante’s cuisine a quality Mediterranean proposal, with rice and traditional cuisine as its trademark. Mediterranean essence, which is also achieved thanks to its proximity to the sea and the seaside neighbourhood of Cabanyal.

Next to the rice fields of the Albufera Natural Park, the market garden of El Perelló offers another authentic gastronomic jewel, the tomatoes of El Perelló, which are grown in sandy areas. Very fleshy, juicy tomatoes with a very thin skin, its special and unmistakable sweetness makes it a highly appreciated product. An extraordinary character that the chef has taken advantage of to prepare a dish of Valencian tomato with anchovies and tuna belly, accompanied by three pickled onions and a gazpacho granita, is one of the restaurant’s most appreciated and renowned dishes.

The freshest and highest quality fish comes from the nearby fish markets that receive every morning the catches from the always generous Mediterranean Sea. Among the tasty options that Marina Restaurante offers is the beach squid, which is prepared whole and Andalusian style with a slightly spicy romesco base, the “sepionet”, similar to the cuttlefish and native to the Valencian coast, grilled, or the Valencian clóchina, similar to mussels, which is added to the restaurant’s menu from May to August.

A culinary experience complete with small bites of Japan at Tatami Japanese Food, a wide range of oriental dishes and sushi from the hands of renowned sushi man.

These gastronomic proposals are accompanied by a good selection of Valencian wines, as well as other national and international references.

Rice and other things

With the advice of the renowned master rice cook Juan Carlos Galvis, Marina Restaurante offers its customers the best versions of this dish. Whether in its more classic forms or in more innovative preparations, its exquisite flavour is marked by the local vegetables from the garden, such as the “garrafón” (a bean) or the “bajoqueta” (flat green bean), both typical of this land. Dry rice dishes such as the classic Valencian and vegetable paella, black rice, senyoret, duck paella with mushrooms, “picantón” chicken paella with snow peas, crab paella, sea bass paella, lobster paella and “txuleta” matured rice paella and rice dishes with vegetables, free-range chicken, seafood, duck with mushrooms, crab or lobster; not forgetting the “fideuá” in its two options, with boletus and foie gras and with fish and seafood, will undoubtedly delight the most demanding palates.

There are other emblematic dishes on the menu of Marina Restaurante that will ensure a repeat experience. Juicy dishes such as salad with prawns, carrots, gherkins and “txangurro” mayonnaise; shrimp and sea bass ceviche with “leche de tigre”, “choclos”, coriander and sweet potato; cod fritters on honey cappuccino; fried eggs accompanied by glass prawns, straw potato  and seafood emulsion; spanish truffled potato omelette; cod confit in garlic oil with traditional “escalivada” and aioli au gratin; fried redfish from the fish market or the mellow shank of suckling lamb.
